Rachi FAQSH is the traditional dry wine of Lebanon. Its vinification is unlike any other dry wine, where the grapes are pressed and their juice is cooked to a near boil altering its microbiological and organoleptic structure pre-fermentation. The name comes from the process of smashing fresh grapes and adding them to the surface of the cooked grape must to enable wild yeast to start the fermentation process.
